Parsnip & Sour Cream Pie
Ingredients:
1 kg parsnips cooked ( 2 x 4 count bags)
Bacon
1 Onion
150 grams sour cream
3/4 cup cream
1 teaspoon chicken stock
chips
1 cup cheese
Cut parsnips in 1/4 lengthwise. Place in baking dish. Cook bacon and onion and sprinkle over parsnips. Beat together sour cream, cream and chicken stock. Pour over parsnips and top with grated cheese and crunched up chips.
Cook at 180 deg C for 1/2 hour.
