Parsnip Fritters

1/2 kg parsnips (about 4)

2 eggs

2 tablespoons Flour

1 tablespoon butter

1/2 cup milk

Cook parsnips in boiling water (salted) until tender.  Drain and mash. Remove any fibrous pieces. Start heating deep hot fat for frying 370 deg. Beat eggs and add together with butter, milk and onion to the parsnip. Beat thoroughly, then season with salt and pepper mixed into flour.  When mixture is even drop in spoonfuls in hot fat.  Brown.
