The natural sweetnes of parsnips is emphasised in this receipe which is even popular with those who think they don’t like this vegetable.

Thinly peel about 400g parsnips. Cut into 5cm lengths, then lengthwise into sticks cutting the larger top portions into twice as many.

Microwave at full power in a covered dish with 2 tablespoons water until barely tender about 4 minutes.
Add 1 tablespoon butter and shake to coat. shake buttered strips in a paper or plastic bag containing flour. Shake off excess.

Heat enough clarified butter to cover the bottom of a large frying pan. When very hot add flavoured parsnips and cook, turning several times until evenly browned.
Serve immediately as a vegetable or warm as a finger food.
