Fluffy Parsnips
750 grams parsnips
2 Tablespoons flour
1/2 cup grated cheese
salt & pepper
2 Tablespoons butter melted
2 eggs, separated
1/2 cup parsnip water
1 cup milk
Boil parsnips, drain & puree. in a food processor mix butter, flour, milk egg yolks salt & pepper and parsnip water. Fold in pureed parsnips & grated cheese.
Beat egg whites till stiff and fold through parsnip mixture.
Place in greased casserole dish. Bake 180deg C for 30 minutes
